Banana Oatmeal Pancakes

When Samantha was 4 this was hands-down her favorite breakfast. I cheat a bit by adding a generous helping of chocolate chips, but even without them, this is a real crowd-pleaser. This is originally from Ambitious Kitchen, but modified according to the kids' preferences.

Ingredients

  • 2 medium ripe bananas (best when they have lots of little brown spots)
  • 2 eggs
  • ½ cup whole milk
  • 1 tsp vanilla extract
  • 1 ½ cups oatmeal (old fashioned rolled oats work well)
  • 2 tsps baking powder
  • ½ tsp ground cinnamon
  • ¼ tsp salt (or less)
  • Olive oil for cooking (optional, I don't find it necessary on non-stick)

Instructions

  1. Add all ingredients to a blender, mix well
  2. Optionally add ½ cup chocolate chips
  3. Cook over well preheated medium heat, look for bubbles when flipping, golden brown

I often shape two pancakes with "ears", then assemble them as bears on your plates (one pancake cut into strips for arms and legs, another for the body). Leftovers are rare.
