Soda Biscuits

These are a little faster and easier than traditional biscuits, also saltier and the kids (at 4 and 6) said they like these better. I usually serve them with gravy, but these are very good eaten with just jam. The original version of this recipe called for sifting twice, but I can't detect a difference.

Ingredients

  • 2 cups flour (all purpose)
  • 1 ½ tsp baking soda
  • ½ tsp salt
  • 4 tbsp butter (cut or cubed finely, makes it easier to combine without a pastry cutter)
  • ¾ milk combined with 4 tbsp vinegar (to emulate buttermilk)

Directions

  • Sift dry ingredients together into a large bowl
  • Work butter in with a fork, until it forms a crumbly dough
  • Combine sour milk
  • Turn onto a floured surface, kneed 5-6 times, no more (overworking the dough = poor consistency)
  • Flatten out to ½ inch, cut out rounds (I always used a pint glass for this)
  • Bake at 425° for 12-15 minutes, or until lightly browned / 190 degrees internal
